Zucchini Bread

I like this receipe for zucchini bread. I've tried like 4 others and none of them are as great as this one. Mom also really wanted me to post this one too, so here you go.

3 eggs
1 c oil
2 c sugar
2 c grated zucchini
1 tb vanilla
3 c flour
1 t soda
2 t cinnamon
1/4 t B.P
1 t salt

Beat eggs; add oil, sugar, zucchini and vanilla. Mix, add rest. Grease and flour loaf pans. Cook at 325 for 1 hour.

Yes there is really 1 cup of oil. When I asked Sherri if she was really sure.

Thanks for the recipe. It is really great. I had some rasins in the cupboard so I thought that I would add them also. Hey it is really good. I also was out of eggs. But, hey I had some powered eggs, so I used them. The recipe was really great. I doubled the recipe and it made 2 big loafs and 3 medium size loafs. Dad ate 1/2 loaf the first night. I hope to share the medium ones. YUMMMMMMMy recipe.
